How long can I keep PP in "cooler" before serving
Hey just wondering ... gonna pull a 8lb butt off my egg at about 10:30 am and plan to serve it at a gathering at 6:30 pm... Do you all think I should just try to keep it in the "heat cooler" for that long (~ 8 hrs) or should I rest it for an hour or two, pull it the re heat it later?[p]Thanks..[p]
Oh , BTW little egg was churnin all night in 25 Degree weather... woke up this morning rock solid at 225... beautiful![p]

I have used the foil/towel/cooler method for 5 hours one time and it was still hot. I am not sure about 8 hours though. One thing you could do is keep a polder in the butt and monitor it's internal temp to make sure it doesn't fall into the danger zone (below 140, i believe). If you see it will then either refridgerate or keep warm in a barely warm egg (180-200)
