70 oz T-Rex Sirloin......

Was in the mood for steak....started with a 70 oz sirloin with some evoo, kosher salt, and pepper.....
The 700* sear...
After resting, on for a smoke with mesquite...
A few asparagus while the final rest was taking place...
Medium for me....delicious....

That is one heck of a piece of meat!! How long was the total cook?

It's ALWAYS better to have it and not need it than to need it and not have it! Steak sammies GALORE! :cheer:

Total cook including rest was around 50 mins....cooked it to 132* internal.

That took less time than I thought it would...nicely done.
