What does "with elbow" mean?

I just went in search for a primal strip loin from a couple local butcher shops. I want about a 10 to 12 pound one to dry age. The only response so far has been:

...USDA Certified Angus Choice Strip Loins in stock $6.99/LB. with elbow…normally it’s $9.99/LB. for individual steaks per elbow.

    don’t mind the “elbow” terminology…just slang..sorry!

  • my bet is that it is a slang way to say LB. LBow (i.e elbow).. maybe I am wrong but I'm sticking with that bet.

This accounts for the modern distinguishing terms pound-mass and pound-force.

    that's not obnoxious. obnoxious is going to wikipedia and then reading it and trying to type it like it's something you knew off the top of your head. :whistle:

    ONLY a guess!I would think it means untrimmed.I call it the tail,when you buy a whole ribeye and slice it has a "tail' that is usually just fat.I trim them off.I usually see why they were cheaper per pound to buy that way when I see how much unusable trimmings I have left over when finished.
