PP, better to pull hot or cold

Is it better to pull pork hot or cold? I smoked a small butt yesterday (to a internal temp of 195*), went to pull it today and it was not realy easy. I put her on the egg wrapped in foil (dome temp of 200*) for a few hours, let it rest for abou 15 minutes and progeeded to pull it and it was quite easy. Coulsd it be that it was not done? What's the deal?[p]Smokey

Smokey,[p]It was done. Pull it hot after a 15-20 minute rest after the finish of the cook. Pork (like all meats) are tougher when cold.[p]Spin

Smokey,
I can't say what is easier - I have always pulled it after 1-2 hrs and its still pretty hot. Its usually very very tender then.[p]Tim

Smokey,[p]If pulling cold would work, my fingers wouldn't be perpetually stinging![p]Brant
