Thanksgiving is past and left overs are getting old. Most of the college rivalry football games have come & gone too (hope your team won!).[p]Now comes the planning process for a Christmas feast. We have been kicking menu ideas around, but have not settled on one yet. So far, the front runner is a beef tenderloin, seared then baked.[p]Have any of you thought about the "next big" meal? If so, what are your thoughts on the main course?[p]Banker John

Banker John,
yup...I'm leaning heavily toward doing Dr Chicken's wonderful Double Smoked Ham. This time I'll do the entire recipe including the injections with the Watkins extracts et.al. that I bought last year, but never got around to that stage. The recipe is known for its killer results!

Banker John,
Well, those of us with English wives just have to do Thanksgiving ALL OVER AGAIN!! Yep, the English have to have their turkey on Christmas day. The only thing different that we do on Christmas is Christmas Pudding.[p]TNW

Banker John,
hey, next big holiday for my clan is channukah... .i'm planning on doing a prime rib, but more creatively, i'm already figuring out how to do potatoe latkes (pancakes) on my fish grid. . .i do a pretty heavy corse grind on my potatoes and onions, and they should stay together just like my crabcakes. .. .probably will do a test try in the next few days, since i still have my kitchen aid out from doing cakes this past week. ..

Banker John,
I'm leaning, at this moment, towards brining a "fresh" ham and smoking with some fruit wood.

Nature Boy,[p]Thanks for the kind words. It's a great recipe that MadMax shared with us and the twice baked taters and the string beans go real good with it, as well as a cold one.[p]Chuck

ranger ray,[p]Those smoked almonds sound mighty good. I have done them before with good success but would love to get Bocchie's recipe. I'll try a search, I must have missed it. [p]Chuck
