cooking time

First bird on the egg. 13.5 pounds @ 300 for 4 hours. Looks great, but meat thermometer only @ 140. Should I raise cooking temp? If not, how much longer until it's done? Thanks!

  • gagator01,
if you're roasting. .300 is probably a little low. . .i'd let it rise up to between 325 and 350. .. keep basting. . .by my guide, 13.5 should have taken about 4 - 4 1/2 hours at 325, so you could still be a good hour to hour and a half away, even letting the temps go up to 325. . .don't go too high on temps though, all you'll do then is overcook the outside of the breast till it crumbles. .[p]good luck[p]max

  • mad max beyond eggdome,
Thanks Max. I forgot to add I am cooking in a vertical turkey rack with a drip pan beneath.

  • gagator01,
ok, so you are still going pretty indirect. . .like i said, let her creep on up around 325. .. if you have the time, don't go any higher. .she'll get done for you in a little bit. . .oughta be awesome. ..
