Internal Temps
Bigsmoke
Posts: 30
The internal (breast) temp is already at 110* after only 1.75 hrs. I'm worried that it is cooking too quickly. 14 lbs @ 325+/-. Thigh is at 140*.

Bigsmoke,[p]That sounds possible. You didn't tell us how you are cooking it, but the internal temps jump up faster at the start and the increase slows as it gets closer and closer to the temp around it - in your case something near 325°. I just do turkey breasts so I have little experience with dark meat.[p]Tim

Bigsmoke,[p]At 325 degrees your cook time should be about 10 to 15 minutes a pound. If you are cooking indirect, that will lengthen your time a little. You could always clodse the dampeners a little and slow it down a tad. Good luck![p]grill'nMike
