Haven't done this on the egg yet, but plan to soon. I have done it on the Weber. Grill sausages until they're about half done and then remove. Sautee some onions, garlic and peppers, add your favorite pasta sauce recipe and simmer. Cut the partially cooked sausages into bite sized pieces and add to the sauce. Simmer some more, at least until the sausages are fully cooked. Serve over pasta with some garlic toast and a salad. Awesome!
Or... fully grill the sausages, saute some onions and green/red bell peppers and serve on a hard roll. With a side of baked beans perhaps?
Was going to try my first egg pizza tonight, but after writing this, I'm having second thoughts!I hate it when I go to the kitchen for food and all I find are ingredients!

Hi Reb,
I always keep it simple and cook it on a raised grid, direct over a fairly low fire. I aim for it to be golden brown and about 180º internal in about 30 minutes turning about every 5 minutes. I use very little smoke wood if any. It seams as though sausages can pick up smoke flavor very well and it is not hard to get to much. Then if you want to add it to a spaghetti sauce or something you can cut it up to the size you want or slap it in a hot dog bun.

Sausage is fully cooked and juiciest when cooked to 155 internal except for chicken or turkey sausage. Those should be cooked to 165. -RP

Take the meat out of them stuff it into one of the nice hot peppers that are around right now with some cream cheese, wrap the whole thing in back and cook indirect at 400 until the bacon is crisp and the sausage cooked. Mega ABT's.

I like to cut them open & spread them out a little, cook slow till done, then crank up the heat a little to put some charr on it, this picture is part of the way through the process on the mini:

We like hot Italian sausage with Potatoes, Onions, peppers and Pepperochinis (sp?) We do them in cast iron.

Do sausages first, remove and drain.
Potatoes until starting to brown up, add onions and peppers. When cooked add the cooked sausages and then the ripped up Pepperochinis and some of the liquid from the bottle. Cover and let steam for a moment and serve with crusty Italian bread and a couple of glasses of Chianti. -
