Here I am.
I don't trim, I remove membrane, slaver some yellow mustard on, use either DP Dizzy Dust or John Henry's Pecan rub (sometimes add a little turbinado sugar), pecan for smoke, indirect at 240 for 6 - 7 hours (I don't foil but sometimes mist with 50/50 apple juice and apple cider vinegar), and finish with SBR about 20 minutes befoe they come off.
Not sure if I covered the question - just took a shot in the dark.
Looking for a nice pull back on the bones.

Gimme another 5 hrs or so and I'll have some for you! I had to cram 3 STL racks onto a medium (no small task).

Thanks Frank. I had to trim to STL to get 3 slabs on the ol medium. One day I will join the ranks of the big boys!

You could sell bbq in the frint yard as a money maker. I will be over there later. I am meeting a friend at the courts to play some tennis at 7:30.
