Air drying a turkey

I wanted to try something to hopefully save me from having to start my turkey cook at 4 AM. I have a 23#+ turkey brining in the brine that Wardster posted for Qbabe down the page a ways, which I plan to cook early Sat. morning. I would like to remove it from the brine Fri. night, which would be 3 full days of brining. Does anyone see or know of a problem with allowing it to air dry in the fridge overnight Friday night so I can just get it cooking first thing Sat. morning. This would avoid the drying time that I would have to do at 4AM in order to start cooking by 6 AM. I personally dont see where there would be a problem as long as the brine stays cold and the bird stays cold, putting in a cold fridge uncovered shouldnt cause a problem...But I certainly dont want to make my family sick...Any experience/advise????
