Success! Elder Ward's long burn
Bob V
Posts: 195
A couple of weeks ago I experimented on a kong slow cook of a pork shoulder. I fiddled too much wit hthe settings and the fire went out in the middle of the night. Last night I started a 7lb shoulder around 9:30pm using Elder Ward's method, woke up twice to check the temperature, and the Egg stayed rock-solid at 200 all night long - at 30 degrees outside temp.[p]This morning the pork is at 165 and holding, and the entire back deck of the house smells like heaven. Plan to take it off when it hits 200 and wrap in foil until dinner.[p]You never think it can possibly taste as good as it smells, and then it does.....[p]Bob V

Bob V,[p]Where do I find Elder Ward's method of fire building? I have not done an "all nighter" yet and if it helps assure success, I want to give it a whirl.[p]Happy Thanksgiving

In the forum up at the top, go to recipes, pork, NC Style Barbecue. He gives a very good and detailed method - including slaw recipes![p]Bob V

Bob V,
I agree, it's an excellent method for building and holding a long cook. Recently did an 18 hour cook and had enough fuel to have easily gone another 6-8 if needed.

Bob V,[p]You owe it all to you BBQGuru![p]Keep em Smokin,

Jethro,[p]No BBQGuru other than Elder Ward. Just a simple daisy wheel almost closed and the bottom slide only 1/4 inch open.[p]Bob[p]

Bob V,
You may find it easier in the future to cook lo ' n ' slow at a dome temp of 250º. A temp that's easier to maintain.
Let the fun begin!

Bob V,
Bob V,[p]Thanks for your help. Sounds like a rather particular way to start the fire. When he says "chimney" I assume he is talking about one of those aluminum cylindrical low-tech devices. Basically, once you have your pile of lump, place a fire starter cube on top, light the fire starter cube, place the chimney on top of the pile of lump which contains a fist full of lump and once the lump in the chimney is going, remove the chimney and the lite lump from the chimney will fall onto the other lump and off you go. Right??[p]Thanks.

Bob V,[p]Well I guess you just got lucky. If I were you I'd go spend $200 before trying this stunt again ;-)![p]Keep em Smokin,
Jethro
