Tried this Chicken Spiedini recipe with the prodding of oldest daughter who was home for the weekend:

    Thanks! I think the stress :lol: of cooking for a waiting crowd makes one loose his appetite, so wasn't all that hungry after, but we have plenty of leftovers.

    I have a bottle of Salamida's State fair Spiedie sauce in front of me. This recipe comes very close and I like it on lamb and chicken. HTH.

    Lamb, Kabob. La Bamba Spiedies, Endicott


    INGREDIENTS:
    2 lb Meat - Beef, Lamb, & Pork [cut into 3/4"-1" cubes]
    1 Tbs Oregano
    1 Tbs Onion [minced]
    2 Tbs Vinegar
    1 fresh Lemon juiced
    6 Tbs Olive or Salad Oil
    1 tsp Basil
    1 tsp Parsley
    1 tsp Fresh Mint
    1 tsp Garlic Salt
    Salt & Pepper [to taste]




    Procedure
    1 Combine all and soak overnight. [ Best if a week ]
    2 Place meat cubes on skewer and cook on grill (350 for 15 minutes) until brown.
    3 Serve on French or Italian bread or Hoagie buns.
    NOTE:
    1 Substitute Chicken if unable to obtain lamb.

    The one in the pic, Erin. The same Sat. as OKC, she called me about grabbing a used small for a dang good price. So now she has a small & a mini. Four eggs in the family in about 7 months. :woohoo:
