new use for leftover country style ribs

After cooking a batch of country style ribs using a Memphis style rub,I removed the bone/fat and placed the meat in a small grinder and fine ground it mixed with a little bit of lexington pulled pork sauce. I then layered my Jalepenos first with shredded cheddar cheese followed by cream cheese, then piled it high with the ground meat. I then wrapped the Jalepeno half with one third slice of bacon.these were cooked at 300c for about 25-30 minutes until bacon was crispy. I have experimented with several different ingredients including pulled pork, but these were the best yet! If anyone has any other suggestions, please let me know.....I am an ABT addict!!

That sounds great - Have you ever tried it using "DUCK SAUSAGE"

cayella,I cant get down low enough to enjoy any "Duck Sausage"! (bad knees)Duckin down that low is just too painfull!I do have a good recipe for "Trouser Trout" if you would be interested!

I've also had success with Geese as well - however it is a bit dry but the cheese and bacon helps.
