Here is my survey: what temperature do you like to cook Butt for pulled pork? How about ribs or brisket? I like 250 because it's easy to maintain.

    Paul,
i've done 200 lately, bumping it up at the end to 220-250. it takes a loooong time this way.[p]generally, though, I do ribs and pulled pork at about 220.[p]i have had great luck holding temps at any level, courtesy of the elder ward fire-style. i've had the need to start out at 190, even, and had no issue there, holding it for a few hours. only so much air in air in, only so much smoke out, can't really change the pyrodynamics i guess.
