Been without my Z. bread machine for about 4 years, just got it back a few days ago.
Here is the recommended Zucchini bread recipe:
SPICED
ZUCCHINI BREAD
3 Large Eggs,
beaten lightly
1/3 cup Vegetable oil
2 cups All Purpose Flour
2 tsp. Baking Powder
1 tsp. Baking Soda
3/4 cup Sugar
1/2 tsp. Salt
1/2 tsp. Allspice
1 tsp. Cinnamon
1 tsp. Orange Peel
When beep sounds add:
1 cup Shredded Zucchini
3/4 cup Chopped Walnuts
I will omitt the Allspice, orange peel and cut the sugar some.
Now, I know nothing of this but would like to add some rum, what/how to add something to keep it from being "Wet" or what do I cut???
It's a loaf pan so probably no exta room.
Suggestions welcome,
Thanks,
Bordello

How much rum do you plan on adding? Lose 1 egg. 1/4 cup rum instead.
-
As a start any amount will work. So you think that will work?
Thanks,
Bordello -
Absolutely. Add the rum with the wet ingredients--eggs in this case. If it's only a tablespoon or two, just add it. if you're talking larger amounts, take out the equivalent measurement of egg, but only up to one egg. Eggs are in there for a reason.
Love my Zo!

Thank you Miss Judy,
I just wasn't sure what to remove. Glad to have my machine back.
