conflicts in temperatures

interesting to see the different temperatures that are suggested by various web sites. starts with 137 and some at 160 for pork. Believe it was drbbq that said the 160 was outdated. the post from TimM i believe said something similar but then suggested 160 for wild game because 137 was hot enough but thermometer inacuracy ect go to 160. thats 23 degrees which is about as accurate as your oven thermostat is. Most of our BBQ tools are better than that. I do prefer the taste of a pork tenderloin that is not over cooked.

    jwitheld,[p]I'm with you. (At least at the moment) my favorite tenderloin is slightly charred on the outside, pink on the interior. (600° direct just long enough to set up the char on all surfaces, then taken off and foil-wrapped to finish on the counter.)[p]Ken
