<p />So, Max gives me a recipe for crabcakes and we made us some really good crabcakes. Thanks Max. That recipe is perfect. Will do again![p]JohnTonia.jpg[p]WooDoggies and QBabe came visiting, and much fun was had. WD cooked portabellos, Tonia cooked her special mashed potatoes with goat cheese.     Max, they were incredible. Like ChedRD's wings, the Egg seems to apply a little of its own magic, and the result is what I call "almost fried".[p]Good stuff. At least you know what you missed!! Might be a week or so before I get it up on the website, but here is the text version for those who can't wait![p]Mad Max Beyond Eggdome’s Tsunami Spin Crab Cakes[p]1 lb of crabmeat (use Lump or Backfin, don’t use “special” or claw), carefully separated and any shell removed[p]2 slices of white bread, crusts removed and cut into small bits[p]mix together:[p]1 egg
    1 heaping tblspn mayo
    1 tblspn Dijon mustard
    1 tspn Old Bay
    1 tspn DIZZY PIG TSUNAMI SPIN[p]Gently add the crabmeat, bread and egg mix together, form into four patties and place in fridge for one hour.[p]Bring egg temp up to 375 dome temp.[p]Place fish grid on top of grill in standard direct position[p]Oil Fish grid.[p]Place patties on fish grid, grill direct for approximately 10 minutes, then flip and grill another 7 or 8 minutes (leave them on the first side longer so that they will flip without falling apart). They should be golden brown and a little crisp on the outside.[p]Serve with tarter sauce or cocktail sauce.[p] [p]Thanks again mang!

    dang, now i may have to go out and make a crab meat investment this weekend (for those who are shocked by beef prices, you'll really be shocked by good crabmeat prices). . .[p]i'm just always thrilled when others like the stuff i do. .. i always worry that i'll pass something along, and you guys will try it, and then start poking pins in 'mad max voodoo dolls' while praying to the porcelin god. .. .[p]have a great weekend now that the rain has stopped. . ..

    i'll be there this afternoon. .. . i've found though, that each safeway has the ability to put different stuff on sale at different times. . .. $10 a pound for backfin is a great price though, i may have to buy two. . .[p]last week my safeway had a bunch of pork 'picnics' cryovaced on sale for 95 cents a pound. . .i bought an 8 lber, covered it in dizzy course, smoked it overnight with apple wood for 16 hours, and it was fantastic. . .the family loved it, and we've been eaten pulled pork sandwiches all week. . .simply served on white toast with some 'sweet baby rays'. . .[p]

    Those crab cakes look SO good; I hope the half-price is to be found in my neck of the woods, as I've paid full price recently and it's like eating pure gold![p]I'm pushing Ken Stone's Happy Pappy sauce for pulled pork--no financial interest at all, but you oughta put it next to Sweet Baby Ray's for a taste treat comparison. Thanks for making me feel so welcome![p]Max...that recipe of yours is a winner! Thanks for inspiring us. Sorry you weren't able to make it and SO sorry we missed Brett, but maybe next time. This is the second year in a row that they've sent me to this same conference, so maybe it'll turn into an annual event![p]It was also a great fix for my egg withdrawl that I was in the midst of...up until my visit to the Nature ranch, I last egged well over a week ago and was suffering some major withdrawl symptoms! Thanks for the fix....![p]Tonia - back at work and wading thru over 100 emails... :(

    djm5x9,[p]Here's the recipe...the original is pretty cheezy but can be adjusted for taste easily. Also, a lot of times, I'll just use whatever potatoes are around the house. At the Nature ranch, we about 2 lbs of yukon gold potatoes in stead of the Idaho, so the potatoe to cheese ratio was different as well as the number of servings, but this recipe is wonferfully adaptable, so experiment around...[p]2 large Idaho potatoes, peeled and diced
    3 tbsp butter
    ¼ lb soft goat cheese
    ¼ - ½ cup heavy cream
    salt and pepper to taste[p]Peel and dice potatoes. Put potatoes in a pot of salted water and bring to a boil. Reduce heat and simmer until fork tender, about 12-15 minutes. Remove pan from heat and drain potatoes. Put potatoes back into pot and return to heat. Cook 2-3 minutes stirring constantly to dehydrate potatoes. Remove from heat and add butter and soft goat cheese. Use a hand held masher to mash potatoes to desired consistency. Add cream until desired smoothness is achieved. Season with salt and pepper. Spray a casserole dish with Pam and spoon in potato mixture. Bake in 350° egg for about 30 minutes until lightly browned on top. Yield 4 servings.[p]Tonia

    mad max beyond eggdome,[p]On Sat when I arrived, I went to Ruth's Chris (mostly because it was 5 minutes down the street from my hotel, plus I wanted to see what it was all about). I'm glad I went once, but probably won't go back again for the steaks, since I know now that I can do them better (am I confident, or what!)....now, the Creme Brulee (sp?) that's a different story...it was FABULOUS...that's something I've GOTTA find out how to make![p]For the Monday dinner group, I went with a group of 9 others to BSmith's which was very good...pricey (but all of the ones on that list looked comparable), but very good food and service...[p]Tonia

    i feel the same way about steaks now!. ...yes b. smiths is a little pricey, but the food is unique, delicious, and its a great setting at the train station (i think i mentioned to you before that the restaurant is in the part of the station that used to be the president's waiting area). . .they have a fantastic sunday brunch there. ..all you can eat for about $25.00 a head. . .[p]glad you got to see a little bit of the city.. .

    last time we were there for sunday brunch they had this grilled flank steak with like a sweet and sour sauce thing goin on (pinapples/red pepper flakes), and some fried catfish that was just outstanding. ..my wife tells me that there collard greens were outstanding, but i don't touch those. . .[p]dang, now this is lookin like an expensive weekend. .i now have to have crabcakes and b. smiths (big smiley thing)

    We are in crab country here, and can get it fresh just about everywhere. Not sure how frozen would work, or what the availability of fresh crabmeat is out in 'zona. It comes in a small plastic tub, and is constantly kept on ice. [p]I wonder if scorpions taste like crabs?

    Scorpions for crab meat, now, that is interesting. (ouch)[p]Like I said I don't know much about sea food and it's not my favorite thing but I'm learning.[p]I also like to cook for my neighbors and have a couple that love sea food, and, ÜÜÜ I'm trying a bit of it.[p]I tried my first shrimp cracker/sauce thing two weeks ago while having dinner out white company.     Hey Bordello,[p]Call the seafood section at your local Costco ..... they should sell 1 lb cans of backfin crabmeat.
    It will be kept cold with the salmon, shrimp, crab dip, etc. I can't remember the name, maybe Phillips?, but the can is black with a red crab pictured on the label. It's good stuff.... packaged in Singapore or the Philippines, precooked and would perfectly in max's crabcakes.
    Crab is much sweeter and delicate than shrimp or most any other seafood..... it's hard not to like.[p]Dude, 58 years is too long to wait to eat a good crabcake.... so get on it! :~)[p]John[p] [p]
