Do I need to season my pizza stone?

I picked up a new pizza stone when I bought my BGE, always cook two pizzas, the better half likes veggie and I like meat, do hers first and it doesn't stick to much, I use corn meal in hopes of having it slide off easier and it does a bit, but mine always sticks and makes a mess. Still edible, but mix mash of mush, not slices. I've made 4 pizzas so far and have had the same problem each time. The stone is not hot when I do hers, but hot when I do mine, maybe that’s it. Do I need to season the stone and if so how or just get another stone? Thanks & happy egging all!

  • whip, it sounds like you are not properly preheating your stone, especially since you say as much (the stone is not hot when I do hers). When you put relatively cold dough onto a not hot enough stone, you will get stickage, cornmeal or not. Hold the egg steady at around 500 for at least 20-30 minutes (with the stone set up in there), then put hers on, it'll work just fine. When that could dough hits 500 degrees of stone it'll immediately form a dry crust which, after a couple minutes on there, you should be able to spin like a top with just one finger, Marc

    No, don't season the stone. I, not being a pizza expert, heat my stone up with the platesetter. If the corn meal doesn't work out, try parchment paper cut to fit the bottom of your pizza. Let us know how it works out for you.

    Preheat the stone. You might be putting too much stuff on yours, if you want lots of meat use parchment paper, it will slide right off no matter how much you load on.

    You'll never have a problem with sticking if you get some pizza screens. You spray it with oil, put on your dough and build the pizza right on it. Just slide it off when it's cooked. Some kitchen stores have them or you can Google it and order some. They come in different sizes.

    Here's a picture I saved of Fidel's pizza on a screen. I hope he doesn't mind me using it here! It'll just make him more famous than he already is.
