Wood chips..Best way to add in Egg???

Would sure appreciate some input as to the best way to incorporate wood chips into my Egg for smoke.

What I have been doing is soaking my chips for a couple hours before using, then draining off water, and sprinking the chips over the top of the lump. Seems to work fine the best I have been able to tell.

However, in reading on some wood chip bags, it says nothing about wetting them...and to put them in some heavy duty foil pouch, poke some holes in it, and put the pouch on top of your cooking grid. I would think if you did this, you would have to put this pouch on way before grilling or smoking.

Then I have seen the little iron boxes that you can put chips in for smoking...

Love to hear from the EggMeisters as to what seems to work best for you???????

    You are not required to soak the wood chips before putting them on the egg. Also, better to use wood chunks if you can get them. Incorporate through lump for longest smoke exposure. Wait till the smoke goes to a sweet blue and smells good before putting food on. Basic law...if the smoke smells good coming out of cooker...it will taste good on the food.
    Pouches and those metal boxes are mainly for gas BBQs where people want to get some smoke enhanced flavour.

    Think that about covers it.

    Rib fan hit it-
    I don't soak my chips/chunks unless i soak in red wine for enhanced flavor...An hour in the wine lends a bit more flavor, especially in red meat

    I never soak.

    I just throw a handful or two in.
  • Thanks Wayne!! I do use the Hickory chunks, but when I have the cherry, it's the really small stuff. Nice to know I do not need to soak the woood. If you were going to cook ribs, would you put the chips on about 30 minutes before putting the ribs on?

    See if you can get apple and cherry chunks where you get your hickory. Or order them off the internet.

    For a rib cook...I put wood distributed through lump at initial ignition time. Platesetter (indirect)...let Egg come up to temp and stabalize. By the time the Egg is stabalized you should have nice blue smoke. Time to add the ribs.
