TRex, Try something different - lately I have stuffed mine with shrimp. After cutting the pepper in half I put a little cream cheese on the bottom then a whole shrimp peeled and deveined with the tail on. I let the tail hang out and then stuff with more creamcheese - I use my hands (messy but effective) then I wrap with bacon - though I think I might try prosciutto next. I cook at 325 deg for about 30 min - sometimes direct sometimes indirect. AWSOME BABY AWSOME

    hey buddy.
    Maybe you can deligate some duties and hop on the plane and join is at the Eggfest in Maryland in May. I will cook a couple batches of those tender multi tentacled creatures up ferya.[p]I saw Kenny again this weekend, and he was full of energy and spirit. He went to the hospital today to have the tube removed that is draining his liver area, but they found that there is a pocket of puss that might indicate another minor infection. They took samples to test and decided to leave the tube in until the results come back in 48 hours. He got some horse pill-sized antibiotics to take in the meantime, and did not seemed phazed by the minor setback. Been a long couple of months, but he seems to be pretty far along with a full recovery. Gaining weight back, and a big smile on his face.[p]How is the sweet G'daughter??

    Maybe a silly question, but since the inside of the ABT is sort of insulated with cream cheese, pepper and bacon, could prepared coctail shrimp be substituted? A "little shrimpie" instead of a "little smokie".[p]Thanks,[p]Mike
