The Egg continues to amaze me

Last night I put a 6 lb butt on my egg, stabilized the temp at 230 or so a went to finish a proposal I had to deliver to a client this morning. Well, I ended up working until about 1:00am. I went to sleep and completely forgot about the butt. [p]This morning I got up, showered and went to let the dog out. When I saw the egg with a gentle trickle of smoke coming out I thought "oh sh_t" and remembered I was cooking the butt, sure it was ruined. Dome temp was rock solid at about 210. Polder showed internal temp to be 207. I took it off, wrapped in foil. It looked and smelled great![p]While the egg does not have the capacity of other smokers (metal monsters), it is more forgiving, uses less fuel and gives great results. [p]Smokey[p]

Smokey,several of my cooking buddies try to give me a little grief about the EGG. I can take it because I know they really want one. But my standard answer when folks ask me about the EGG is just what you said, it's the most amazing thing you've ever cooked on. To the EGG!!! Poppasam

poppasam,[p]Very true. I helped a friend cook for a catering event ( on a Lang 84) We cooked 240 lbs of butt at one time (could have held alot more), but were up every hour or so to add wood (about 1/2 a cord). The Lang did a great job for the qualtity, but let's see it sear a steak at 800 degrees![p]
