Jalapeno Pie Sort 'a Day (heavy photos)

It was a beautiful morning here at the Chicken Ranch and worthy of a good breakfast from the Coop. Maybe some Jalapeno Pie. Yes!

Lightly fluffed six eggs and chopped some seeded jalapenos.

Lightly sprayed a pie tin with Pam. Spread 2 cups of Cheddar cheese over the bottom, poured the eggs over the cheese and added an appropriate amount of jalapenos on top.

Lily Large was 275° and waiting.

I folded some HD foil and set the pan down on it.

I waited a few minutes and added some sausage on the side.

In 45 minutes I delivered the results to the table.

Plated it and took my first bite.

I was immediately taken by how good it was. Not hot at all and no need for salt or pepper, although I did add some Dizzy Pig Red Eye Express on the second piece. Good move.
Thinking about serving this for breakfast in Atlanta.
I suppose you could kick it up a few notches if you wanted to but this was great.

that is my kinda pie, I love the idea, will have to give that a try when it becomes pie season in the fall, might have to substitute cayennes for jalapenos however, my jalapeno plant is suckin wind, so far it has produced a grand total of two (2) peppers, by last year this time I had already smoked maybe my fourth egg full of abt's with the crop; on a brighter note, the cayenne plants are producing reasonably wellhappy in the hut
