2.75 #s 1/4" sliced (in store) eye of round
Hi Mt. Sweet and Spicy Jerky cure
Seemed saltier and took 2.5 hours to smoke as it was much wetter, but no fat :blink:

Cheeses good, but Ku doesn't like whole milk Mozzerella cause "it's too soft"

    What flavor wood? Have you tried different woods or the same on both smokes? How long? K, nuff questions! :) :laugh:

    I'm following your jerky cooks as I'm interested in the difference between the Hi Mt cure you use and River City marinade and smoke I use. The eye of round jerky looks very good.

    My two boys will be leaving for college late next week and I've been asked for a Care Package of pulled pork and jerky - guess Monday and Tuesday will be busy eggin' could be worse :laugh:

    I would like to find a recipe without so much sodium nitrate, but then it wouldn't be "cured" would it??

    Unless it has a very long, low smoke???
