Roti?

On another search this morning, I came across "roti", apparently a Caribbean flat bread (?). Anybody have any experience with this?[p]Ken

  • Ken,[p]Got no sperience with the bread but I can give you some info from one of my bread books.[p]The bread is from Sri Lanka and is called Sri Lankan Coconut Breakfast Bread. The recipe calls for about 1-1/2 cups of fresh grated coconut along with some wheat flour, salt, warm water, and oil. It is baked in a large oiled skillet, or griddle. It is close to a batter bread and turned with a spatula at 3-4 minutes and then baked on this side for about 3-4 minutes longer. The recipe I have makes 8-10 small flatbreads about 3" in diameter. Looks great to me but I have not tried it.[p]Dave

    That helps - I think... Thanks. This recipe calls for making a ball of dough around the filling and flattening before baking on a griddle. Seems to me (since they flatten to 1/4 inch finished) that the filling would get pressed into the dough. I may have to make a batch just to see.[p]Ken

  • BlueSmoke,[p]It is Caribbean, also. I have a friend from Trinidad who makes roti with a curried potato filling. There is a big Indian influence to the cooking in the Caaribbean. As I recall, it was more like a pancake than a bread.[p]
