Even after years of grilling & smoking, I learn from the BGE wire.[p]I will always bring in a plastic bag in the frig. Even though my Pennsylvania mother says it is best done in a crock. Just can't fit one in my frig.[p]The 40/4/140 rule got my attention.[p]Nessmuk

If you're having space problems for brining, free up your fridge and use a large ice chest. Set the bird in the brine in double (or even triple) heavy-duty bags, getting as much air out as possible, and keep it in an ice-filled chest. Works for me.
