pork loin fat cap?

should the cap be up or down?

On butts I place the fat cap down so it doesn't wash off the seasonings but on a loin I would put it on top to keep the meat moist. They usually don't have much of a cap anyway.

Why not just cut the fat off the butt before you cook it since it isn't gonna baste the meat? It just renders into the drip pan anyway.
