Portabella Recipe

Hi,
Thought I'd share tonight's dining-
Recipe is:[p]Stuffed Portabellas[p]Stuffing:
¾ C Jasmine Rice (uncooked measure, cooked w/ chicken broth, and cooled)
¾ LB Hot Italian Sausage, removed from casings and browned, cooled
1 Med. Onion
4 cloves garlic
1 Tbs. Dried Oregano
8 Cremeni Mushrooms, finely diced
½ red bell pepper, diced
Salt and Pepper to taste[p]Portabellas (I use a grapefruit knife to remove gills, trim inside flesh)
Sharp Aged White Cheddar Cheese
Basil
Chives[p]
Cook rice as normal, in broth and allow to cool. Brown sausage in fry pan and remove, reserve some grease and use to sauté onion and then add minced garlic, only until clear. Remove onion/garlic, leaving slight amount of fat, add butter and slightly sauté chopped cremeni mushrooms. Blend all with diced bell pepper and allow to cool. Remove gills from Portabellas, coat outside liberally with Extra Virgin Olive Oil, then stuff with mixture. Top with slices of Cheddar. Place on grill @ 275 and smoke until cheese has melted (about 20 min.). Garnish with chopped Basil and Chives. Enjoy!
