Pork Rind Crusted Pork Chops

I was feeling adventurous last night while prepping pork sirloin chops. I crushed a handful of pork rinds, mixed in some rub and patted it all over the chops. To my surprise, the crushed rind adhered very well. Taste was delicious.[p]Ken

Alot of Adkins dieters, will process a bag of rinds and use them as a flour or breadcrumb subsitute. [p][p]
