Ranch Sirloin ~ Part Two

The timing was all wrong for chicken frying the rest of that sirloin steak from Saturday night.... I was ready for fajitas, when I realized I hadn't had a griddle steak in forever, you know, Grandpa style. So, I pulled out my big 10"..... Uh, griddle that is, and got down to business on the small Egg. (the big one was tied up)

That 10" one is a Wagner, I have a 12" Wagner griddle and a 12" Griswold griddle all with bails. I have one unmarked 12" one too. I cook on them all, that's what they were intended for. A couple of them have the bottom pitting from cooking on a wood burning stove.

Many of my skillets are Griswold, and the small ones are my favorite for Egging.
The best source on cast iron, (well Wagner and Griswold anyways) is David Smith.

Interestingly enough my wife and no. 2 son swarmed like bees to honey on the sirloin I had left over from serving no. 1 son and myself. No. 2 son said: "this tastes great buy more." 'nough said.
BTW thanks for the URL on Griswold - I'm going to have to do a "commerical in the bag cleaning" as I'm not happy with the results of my Sunday efforts to clean and season the no. 9 griddle I have. -
