Potato Chip Chicken (pic heavy)

I must give the inspiration for this to AZRP...who did corn flake chicken not too long ago. Thanks Randy for the concept! Chicken legs and wings were on sale, so I bought a small pack of each. Wanted to do something different, and thought of Randys chicken, but didn't have any corn flakes. Had a bag of Lays Potato Chips(that was starting to go stale), so I decided to give this a shot! Put the chips in the food processor, and ground the chips pretty fine. Also, soaked the wings and legs in some Crystal hot sauce for about 30 minutes. I also admit I added a few italian bread crumbs (but very few!), only because I felt I needed to "stretch" my potato chip crumbs. I also knew I needed a binder, so I made an egg wash...two eggs, a cup or so of milk, and another good dose of hot sauce.....
So here we go.....

Legs already done....starting on the wings. Out of the hot sauce bath...into the egg wash, then into the chip crumbs.....Set on a rack to "set up" a bit, before Eggin.....

Letting them "set up"...wings to follow!!

Into the wing/leg rack....and onto the Egg, indirect, and my HUGE mistake.....used 400 dome. :blink: (TOO HOT!!!)
(And TRUST me....the plate setter didnt look like that when the cook was done!!) :blink: 

As you see....nice and crispy!! But a bit too browned!! We did them 400* dome....next time....350* tops!!

Still wonderfully juicy meat, but the outside was just a bit too brown. Not bad for a first try, and I would LOVE to see one of you perfect it!
Definately worthy of a second try here!!

Those look delicious.
Did you cook at 400 because you thought that would be a normal oven temp?
I find that the two don't always agree. I am trying to sort out the relation of oven temp to egg temp to develope a consistent starting point.
I am cooking to temperature but if I know approximately when something should be done I don't have to open the dome to check so often.
Great job. I will try this.

How long did you cook them? I bet 350' for 30- 40 minutes may work ya think.Just guessing.

Those really look good, got me jonesen for those buttermilk soaked corn flake drums again. I had the same problem the first time I tried the heavier coating. It just can't stand up to the higher temps long enough to cook the chicken. -RP
