New Sauce I've been working on.....

I have made this sauce several times and have had enough positve feedback to go ahead and post it.
I made it originaly to go on some yucca root I was cooking, but have found fantastic results on fish and new potatoes. When I say fish, I mean white fish, halibut, snapper, red fish, catfish.....[p]Half a stick of butter
juice of 2 limes
4-5 cloves of garlic
fresh chopped cilantro, to taste
melt in pan and use away. On fish I lather before and save some for after. I think it's the lime that gives it such a unique taste.

    When I was in Belize fishing in September, the folks I met made a similar marinade. They used Juice of 4-5 limes, salt & pepper, 1 jalapeno, fresh cilantro, and an onion. On the way back to the dock from fishing, the deck hand would clean the fish and dice the fish pieces into small pieces, about 1/2" square. From this, marinate the fish in the mixture for 45 minutes until the fish turns to a white cooked looking texture. The fish does actually cook from the acid in the fruit. After 45 minutes, eat it... no need to cook from there.

    Makes sense to me. Since we moved to Tampa, we have eaten a lot of cuban food and I took the idea from some of the dishes I have tried.
    You reminded me, sometimes I mince some white onion and add it to the mixture. Have not tried a jalapeno, but I'm sure I will before the week is out!!!

    Yes. I boiled the yucca and added it to a sauce pan with the sauce and fried it for a bit. It's quite good.....

  • Wardser, I asked because I purchased a small yucca piece yesterday and was prepareing to try a 'mashed yucca with garlic' just found recipe (uses milk).
