Ginger Syrup

Ginger Syrup[p]This recipe is taken from “The Complete Guide to Rum” by Edward Hamilton.[p]For a zesty cocktail, mix a spoonful of this syrup in a glass with some rum to taste, a little water, and a squeeze of lime. Or use a little ginger syrup in your favorite drink.[p]Grate .5 cup of fresh ginger into a small saucepan, cover with water, add 2 cups of brown sugar. Bring this mixture to a boil and stir to keep the mixture from boiling over. This is a mess if it boils over in the galley. Strain into a small jar for later use. This will keep for several weeks unrefrigerated. If you don’t use enough sugar, the ginger will ferment, so don’t skimp on the sugar

    That sounds a lot like Ginger Shrub, which is made by a local family-owned farm/business based on a colonial recipe. It's ginger, sugar, and vinegar to give it tang. It's used in recipes, and added to club soda and lime for a refreshing drink. Check out: www.taitfarmfoods.com
