I still think my fav thing on the egg is pork butt

Couple of pics from a pork butt I did a while back. Several butt posts recently are giving me a hankerin'. This one was prob my favorite. 14 hrs on the egg. Rubbed with BBBR and some slightly-doctored montreal steak for some more kick.

Good butt is hard to beat. I always look forward to the pulling the pork and getting a crack at the bark.

They are my favorite also. I will be cooking a few friday. I have standing orders from friends every time I cook to make them one. The great thing about butts it is just as easy to cook 6 as it is 1.

Just got my new egg for my birthday. A bit overwhelming and lots to learn. What temp did you cook at to leave it 14 hours and not burn? Thanks for info.

I get the Egg goin' @ 275 (dome temp) and use a drip pan (keeping some liquid in it) set in the inverted plate setter. I also mist the butt with apple juice or a combo of juice/cider during the last few hours. If you've never cooked a butt before, be aware that the meat temp will "stall" for a spell during the "plateau" stage. Depending on the size of your roast/s, this stage could last for a few hours or so. Thing is, it's exactly what should happen, so if your dome temp is OK don't touch a thing! Happy Eggin'!
