thanks to all for the great response and the sharing....the searing then roasting appeals to me...after searing at 700F, what is the quickest way to bring temp back down to 350F???thanks again to one and all.....

    by closing the daisy wheel completely (it doesn't create a complete seal like if you put the ceramic cap on) and shutting the bottom vent down to about a credit card width, you should be able to get to 300 -350 within about 20 minutes. ..also, if you plan to go indirect, wait about 10 minutes after closing the vents to get the temps down some, then stick your plate setter in the egg. . .you will be amazed how much heat that thing sucks up and helps lower your overall dome temp. . .once you hit the desired temp, you will probably have to open the bottom vent to about an inch and adjust temps with daisy wheel accordingly. .

    And as always, be mighty careful the firebreathing dragon doesn't get you when you open the dome to feed him your platesetter. This is especially true after sealing it up after high-temp use.

    thanks, i completely forgot about throwing in the warning on backflash. . ..[p]got to make sure you open all the vents to let the air flow through the egg for about 10 - 15 seconds before lifting the lid. . .

    mad max beyond eggdome,[p]You know, I have started using the rain cap to lower the egg temp. I also close the vent all the way. After about 10 minutes or so I put Daisy back on, at my 350 degree setting. And open up the vent appropriately. And BTW, I had some extra felt gasket that I lined the inside of the rain cap with to get an extra good seal.[p]Maybe I'm just lucky but I've never had the lump go out when I do this.[p]Chuck
