Pot Roast on the egg

I seem to remember someone did pot roast on the egg. I have a nice 3lb chunk of chuk that I will be cooking tomorrow and was going to throw it in the crock pot like Mom used to do. Any Egg suggestions? I do have a cast iron dutch oven...

That was it. What was the texture of the meat? My pot roast is usually falling apart tender and quite lean as the braising breaks down the connective tissue and fat. Can you achieve this with the pot uncovered?
