As promised, here is how I prepared the dish....
Flank steak, pounded down a bit to tenderize
in a food processor...
1 bunch of cliantro
5-6 cloves of garlic
juice of 2 limes
1 white onion
2-3 jalapenos
blend to a 'dry' paste
pour in some Tequila until it forms a 'wet' paste then drizzle in some olive oil, it should look like a pesto mix.
Cover meat with paste overnight
grill at 5-600* for 15-20 minutes
smoked with tequila soaked mesquite chips
cut thin across the grain
Hope I did not leave anything out!!!

    Billy,[p]Thanks a bunch...that was one very yummy dish and I can't wait to try it myself. My challenge is getting the flank steak. I never see it in the stores, but I assume that if I ask the meat cutter, he'll take care of me...[p]We had a blast...see you in Hotlanta!

    From the Cook's Thesaurus: "flank steak Notes: This is a lean, flat cut that's fairly tender and extremely flavorful. Properly marinated, it's a wonderful steak to grill or broil, but don't overcook it or it will become very tough. Before serving, cut the steak into thin slices at a slant against the grain. Substitutes: skirt steak OR hanger steak OR top round (for London broil) OR tri-tip roast"[p]None of our top round or london broils look like a flank/skirt steak here in WV. LB's are always cut more like a chuck roast here. The flanks/skirts are usually real flat and rolled up in the packaging. [p]~nikki[p]~nikki
