Just wondering....
I'm doing my second batch of jerky using a 5+lbs flat. Flats are all I can find at Costco. I'll get to the Eastern Market that Mad Max referenced soon and will buy a packer but until then I interested in cooking a brisket but I'm wondering just what am I missing by only cooking a flat?
