My BUTT is cooked far too early.

Have a gang comming for supper latter this afternoon. The three butts I put on last night at 20:30 are now at 203 internal temp. What should I do? thanks for any quick responces.. Paul

    Paul,[p]Wrap them in foil, then wrap with towels and put in a cooler. They will stay hot and moist until you are ready to pull them. Have a great meal.[p]Chuck

    Paul,[p]I would wrap them in aluminum foil, then in a towel, then put in cooler (with a few more towels to take up any extra space). It should stay warm for hours. [p]Smokey

    Thanks for the response. Any idea on how long they will keep in the cooler? I'm a little concerned, that 5-6 hours wrapped up in cooler may be too long.. Paul

    paul,[p]You should be fine. I did a cook a few weeks back and held the butts in a cooler for at least that long and they were fine. I did 8 butts and the last one came out about 7 hours after putting it in the cooler and it was still very hot. I use a styrofoam (sp) cooler that seals pretty tight and keeps the heat in.[p]Chuck
