First brisket... HELP!

I put on my first 10lb. brisket this morning about two hours ago. The internal temp is already up to 125 Degrees! Will it plateau out? Maybe I have the temp probe in at the wrong place. It is on a raised grid over a 6x12" ceramic tile with a water filled grip pan on top. The dome temp is 270 degrees, solid. Any suggestions?

    Sounds like you are doing fine. Just give it time and eventually it will hit the plateau. Somewhere around 160° - 170°. It’s gonna take a while so just relax. [p]270° dome temp is a little higher than what I would do but it should still be just fine. Good luck with it.[p]Matt.

    270 isnt that high because of the water pan, last 1 that I cooked I did 325 dome with water pan for 5.5 hours but it only weighed about 6 pounds, so take your time and have another lemonaide.

    That is perfectly normal. The meat will rise to the plateau fairly quickly and then comes the long wait....
