Catfish Nuggets on the Egg

My wife asked me if I could cook some catfish nuggets on the Egg. I told her yes but then I got to thinking, "no I can't. Not without help." Any suggestions would be appreciated.[p]Spring Chicken

    I used Chef RD's wing mixture for skinless, boneless, chicken strips and they came out great. I don't know why it wouldn't work for the egg.

    I'm talking about the mixture. Mix the corn meal and other ingredients in a bowl, dip catfish in the egg/milk batter and then cover with the corn meal mixture. I cooked my chicken strips at 350 and they turned out crispy. I've never tired this but I think I will.
    Chef RD's wings, the basic recipe is not at all hot. Gfw modified RD's recipe for hot wings.
    No sauce is involved at all.
    Look at it as batter dipped then cooked at a high temp on the egg.
    I guess I better try before spouting off. It worked for thin chicken strips, I thought it would work for fish filets.[p]CWM

    I didn't have much time so I did what most Eggheads do... experiment. I used skewers with some yellow squash, onions, jalapenos and the catfish nuggets. Sprinkled some of Wil Menard's Evangeline's Cajun Shaker Rub on it and cooked it direct at about 300° until my wife got home. Then I kicked it up to 400° for about five minutes, rotating all the time. Good yea! Even my wife was impressed. We're gonna do that again soon and add some mushrooms. Here's a photo of them on the Egg. Thanks for the suggestion.[p]Oh, by the way, I opted for the operation so I will be going under the knife sometime around Halloween unless things change. I'll be out of touch for a couple of weeks.[p]I did learn a few things. If you are a male over 40, get a prostate exam every year. Even more often if your father and grandfather had prostate cancer, as was my situation. I caught mine early. A friend of mine was too late and his life expectancy was shortened by about ten years.     Although it's not really taking advantage of the smoking or moisture retention qualities of the Egg, I occasionally do "blackened" fish in a cast iron skillet on the Egg. Blackening requires extremely high heat and generates copious amounts of smoke so the indoor stove is not an option. The Egg is perfect for this. Blackened catfish is great.[p]Dave

    Ahhhh....sorry, I was missing it. I thought that the wings were like most other wings with simply some type of hot bbq sauce slathered on. I didn't realize they were breaded. After finding the recipe, all it seems to be is a basic milk/egg wash then dredged in seasoned cornmeal. Probly would work with fish. I will have to try it sometime. [p]~nikki
