Wanted Authentic Italian Spagetti sauce recipe !!
Hello fellow Eggers,
I am Franks wife (his eggin' assistant, he does the outside cookin' and I do the inside cookin') and thoroughly enjoy all the cullinary wonders of the BGE that it has to offer.[p]The problem: I can't seem to find a great taste in my throw together (Franks wife style) spagetti sauce so I am resorting to conforming to a recipe. Conforming to a recipe is like wrestlin' one of Swamp Baby's
kin! But I am willin' to do it for the supreme taste that my Frank will be wantin' more!! Instead of "what the heck were you thinkin'(my Frank and families usual response) I want to soar with the spagetti sauce greats and hear the the comment "your Mama must have been Italian with sauce like that!!!" mmmm good!!!!![p]Thanks for your time and readin' this plight of Franks wife!

Heat 1/4 cup of olive oil in pot. Chop 1 onion. Thinly slice 2 cloves of garlic. Put the onion and garlic in pot and cook until translucent. Meanwhile, open two cans of whole SanMarzano tomatoes (good tomatoes are key). Crush the tomatoes with your hands. Put the tomatoes in the pot with the onion. Finely grate 1/2 carrot into the pot. Salt and pepper to taste. Cook for 30 minutes.

Franks Wife, main keys to the sauce, use some braised spicy Italian sauage, use basil, oregano, some sugar to cut the bitterness, bellpeppers, onions, ground beef, want to kick it up more, pepperoni, mushrooms. Let it simmer is a crock pot on low for 8 hours, stir to keep from burning, use tomato paste, the best products only. And when your done, it can be frozen and used later for and other Italian dish.

Here is the recipe I use. It comes from Mary Ann Esposito's cookbook and everyone who has tried has loved it. It takes a little effort but cans and freezes well.[p]Ingredients:
2 Tbsp Olive Oil
1 Clove Garlic, chopped
1 medium onion, coarse chopped
1 stalk celery, coarse chopped
1 large carrot, coarse chopped
1 tablespoon lard (I use butter)
1 Pound beef round or chuck cut into 1.2 inch cubes
1/2 cup dry red wine
2 28 ounce cans plum tomatoes
1 bay leaf
1 Tbsp salt[p]In large saucepan, heat the oil. Add the garlic and saute until soft. Add the onion, celery, and carrot and saute for 5 to 7 minutes, or until soft. Remove the veggies from the pan and set aside.[p]Add the lard to the saucepan and melt it over a medium-high heat. Pat the meat dry and add it to the pan, brown it well. Add the wine and simmer 5 minutes. Add the tomatoes, bay leaf and salt. Return the veggies to the pan. Simmer, covered over low heat until the meat is tender, about 45 minutes. Remove the bay leaf and discard. Process the sauce in a food processor in batches until smooth.[p]- Jason -

This sounds like a good start...but it needs more Italian seasonings throughout the cook. (add to the sauted onions, then to the hamburger, then to the whole pot as it simmers)[p]I'd add more garlic (maybe 6-7 cloves) more bay, crushed red pepper, oregano, basil, fennel, (or a "pre made" Italian seasoning)[p]Towards the very end, add honey. This will bring out the flavor like you wouldn't believe...just once or twice around the pot. Mom taught me that one....[p]Mike in MN

Mike in MN,[p]This is a base recipe that is great as it is on pasta or polenta or as you said you can spice it up. adding good italian sausage and the spices you mentioned make it a great sauce for lasagna and the chunky types of pasta. Since no 2 peoples tastes are alike I like to start with this and work up![p]Problem is now I am starting to get a craving for and Italian dinner. Hmmm Abbacchio al Forno anyone?[p]Jason

yep, sounds good.[p]Fresh tomatoes are in full bloom around here, so I just bought a 1/2 bushel for???? I'm not sure yet.. We get good tomatoes for such a limited time, bummer. And of course, we had a hard freeze here a few nights ago, so that may end the fresh tomatoes....[p]Spaghetti sauce?[p]Mike in MN

start with pork (chops, whatever),cook till done. then chop. add your favorite seasonings, oregano, basil, garlic...all the good stuff. pour in a large can of tomato juice :-).....cook for 2-3 hours...........
i couldn't believe this recipe works, my friend is Italian, and he turned me on to this....
