Please give me a few thoughts on cooking a 3.5 lb turkey breast. If I recall, it needs to reach about 175 internal temp.[p]Smokey

Smokey, pull it off at about 177 and wrap to rest. A good companion is stuffed bell peppers with a jambalaya or rice dressing, put the peppers on about an hour into the cooking process.

Wil,[p]I'm thinking I'll coat with olive oil, add some Tsunami rub and cook at about 325 or 350 for 50 minutes to an hour (or till 177). Sound about right?

Smokey,
yeah sounds good but I usually go about 250 for about 3 hours, the breasts keeps more moisture in that temp. range
-
Wil,[p]I'l give that a try!

Wil, I think to do a low temp cook on a very low fat cut requires an effective brining. Otherwise I would go about 350*. This has been my experience at any rate.
