Boston Butt - Boned, or Bone-in

Do both, and compare them! Boneless is nice because you can rub the inside and tie it back up, but I think you will find the bone-in to yield a more moist product. The bone also provides flavor, IMO.

As Chris said, bone-in is much more moist and flavorful, but compare the two. You may like it better, and anyway, comparison is always a great reason to have some more 'que![p]Jim

Tony, i did one with the bone in this weekend and found that it was more flavoful than the boneless ones that i have always cooked. they are on sale this week for 59 cents per pound and i will be buying a few. the dog likes the one with the bone to.

We seem to have switched from butts to picnic shoulders - bone in - 'cause the family says the shoulder has much better flavor. Of course, if I cook butt they will trample you to get to it!

For no real good reason, I almost always go for the bone-in version. If you are using an electronic thermometer, be careful to place the probe clear of the bone, or expect goofy readings.
