I had a 15lb AAA (Canadian for Prime) Sirloin tip roast like Beli's that I used Richard's from Florida's recipe on. My lord was it good :woohoo: :woohoo: :woohoo: .
Trimmed and on it's way in.

Then a nap while it cooked and people came and I sliced it. Then I remembered to take another picture

Here's everybody enjoying it all over the house:

Looks good. Time/Temp/Setup?

Edited the post so it points to the original recipe properly.
I followed the recipe for the injection as well as the ingredients in my kitchen pantry would allow, but did not mustard or rub. Got the egg to 250 and then added cherry chips and smoked direct for 25 minutes then on a grid over water in a pan at 250 dome until internal temperature was 130. Took about 4 hours for this beast.
I really would not hesitate to recommend this recipe. Thanks Richard.

Con him into smuggling you some of his secret SPICES!!!
Best thing to happen to beef in the last 100 years!!!

Doug, that is a beast of a cut of beef! Looks great and I was wondering what you were going to do with all the beef until the pics. Looks like a great time had by all.

Looks mightyfine. Looks like all your judges are pretty happy.
BTW - Noticed a few boards missing in the alfresco shot. You can actually buy boards from your local lumber yard to make cedar planks. You don't have to pull them off your fence.
Nice cook -
nice meat! and based on your choice of espresso machines you are obviously sophisticated , talented and know quality when you see it [uh, i have a rancillio as does zippylip an several others of us  ]

Funny stuff.
We are very friendly with the neighbors and their kids, the hole in the fence is for free interyard movement. We'll probably keep it when we rebuild the fence.

LOL, thanks Bill. Little Miss Silvia is like moving from gas to charcoal. But the Mazzer Mini there is the LBGE of the grinding world. I may get a HX machine in the future so I can do more back to back shots, but I will never replace that Mazzer.
Speaking of which, time for a coffee

Good neighbors are a blessing - you realize you wouldn't be good neighbors if you weren't a good neighbor. Nice.
