Cooking in the egg with the lid off your dutch oven will give you a nice mild smoke-infused flavor.[p]More fun too.

KL, depends on if the lid is on or off, and then how into the burn the coals are. I did asparagus tonight, boiled in a dutch oven just because I didn't want to waste the heat. Turned out the same as if I had boiled them (only 2 minutes) on the range top. But top off, early burn coals will add a smoke flavor to whatever you're cooking.

KL,Yes, leave the lid off. There is an amazing difference in taste for the same recipe cooked in the egg in a D.O. A friend said he thought he had died and gone to heaven after eating egged chili.Check QBabe's post below...

I use my Dutch Over with lid off. I set it on an aluminum pizza pan. [p]I cook at about 225 & cook longer than a routine 350 oven cook.[p]
