Is the water supposed to boil

I am doing my second cook on my egg: country style ribs on an indirect cook over a pan of water, my target temperature is 250° over a pan of water. Is the water supposed to boil? (It is boiling and I wonder if it will give me "steamed" ribs)

water is boiling at 212 and yes they are kinda steaming, so cover up your water with a sheet of foil

you can do indirect without the water, which would be better, briskets are good with a water pan.IMO

Paul, if the egg temp is >212, the water will boil. I would be surprised if you could get to 250 with a pan of water trying to maintain no more than 212. Yes, they will definitely be steamed, but that's not necessarily bad. I would say almost poached. Be careful if the water boils away, the temp could skyrocket on you! Let us know the results.

Paul, What do you set the pan of water on?
If it sit on the grill what do you put the ribs on?
Do you have to have a placesitter to cook in this manner?

Why the need to cook over a pan of water? [p]The beauty of the egg is that it retains the natural mositure in the meat. When we used the old "water pan smokers" there was a need for something to make the cook indirect.[p]Personally, I do mine direct but you could also do yours indirect over a drip pan and get the same great results.

<p />Actually the reason I asked is I had a pot of beans on the egg and since it was fired up I tossed on some boneless country style ribs on a rack over the beans. Although the beans were certainly boiling the ribs didn't seem steamed, they were very deliscious. About 2 hours at 275 or 300.
