Cedar Planked Halibut

I have some nice 11/2" thick halibut steaks. I would like to cedar plank them in the egg. What cooking temp should I use to maximize the plank smoke, and how long should I cook them.

Since cedar is very resinous, you don't want a lot of smoke or it will overwhelm the fish and leave a bad taste. Try 350F over direct coals for about 10-15 minutes or until fish reaches 125F.

If I were to backtrack and just smoke the halibut with Alder chips ( no cedar planking ), would you still recommend the same temp and cooking time ? -

I would think that cedar might overwhelm a delicate fish. Maybe maple or oak or just grill it.
