Smoking wood used for Pulled Pork??

What wood do you use to smoke for pulled pork? Making a 12lb for Sat and curious what anyone uses. Will use Dizzy Pig rub and can't wait. Ymmmmm. Do you smoke right when pork roast goes on?? I thought I had read to smoke at the beginning of cooking roast. Will check in the morn for the ultimate answers. Thanks

    I vote for hickory. Don't know about when to put wood vs. meat on...hubby does that job.[p]~nikki

    Hickory is real good with pork, as is Oak. Sometimes I'll mix in some apple or cherry. No mesquite.[p]Pork is pretty tolerant of a good dose of smoke, but before you put your meat on, wait a bit after you put your wood in so that you don't get that bitter thick choking tan/brown smoke.[p]Not the ultimate answer, but a couple of thoughts anyway! Hope it helps.

    maddaug, HICKORY, HICKORY, HICKORY as Nature Boy said always use smoke in the beginning - that way the smoke penetrates before the outside has seared and the crust (bark) is formed. I also put the chunks on for a short while befor putting the meat on. Just make sure you have enough chunks to smoke the meat for 30 min. or so.[p]Good luck. YUM !!!!!!!!!!!!!!!

    Thanks for the tips. I think we used hickory the 1st time and it was great. When I asked the hubby what we used he said always apple but that might be why I thought it could be lacking smokey flavor. Hickory it is then. Sunday we will have no kitchen for about 6 weeks so I'm happy to have the egg.

    I use Pecan for my pork.It gives it a nice flavor.

    Gooba, now you are one who knows what he is talking about. Pecan is awesome. And since I have had so many limbs to come down this year, I will once again bring pecan logs to EGGtoberfest for anyone who wants them - first come, first serve. I have about 8-10 logs about 30" long and 3" in diameter.

    I wish I had some of those logs also.Do not forget the apple juice for the posk also.I mist mine with apple juice a couple of times before the end of the cook.
