untrimmed side ribs on Small

Decided to try an untrimmed rack of side ribs on Small. Couldn't fit with p/s, so I did this setup. The Small found it's sweet spot at 250*

Part way into the cook, put on four sausages around the rack, came out really good

Added potatoes after pulling the sausages

The two bones fell off when I lifted the rack. No foil.

The ribs had a meaty end and a bonny end, the bonny end came out dry. Potatoes came out real nice. In hind sight, should have trimmed it and cooked indirect with p/s, or cooked on Large. Total cook took 8.5 hours, including interruptions with sausages and potatoes.

Thanks. Had to improvise with the setup. One valuable lesson learned from mad max's turkey recipe is to make sure everything fits before starting the fire.canuckland
