untrimmed side ribs on Small

Decided to try an untrimmed rack of side ribs on Small. Couldn't fit with p/s, so I did this setup. The Small found it's sweet spot at 250*

Part way into the cook, put on four sausages around the rack, came out really good

Added potatoes after pulling the sausages

The two bones fell off when I lifted the rack. No foil.

The ribs had a meaty end and a bonny end, the bonny end came out dry. Potatoes came out real nice. In hind sight, should have trimmed it and cooked indirect with p/s, or cooked on Large. Total cook took 8.5 hours, including interruptions with sausages and potatoes.
