Any meat cutters out there?
Need advice on how to cut up an entire beef tenderloin and make bacon wrapped filets. Having guests for the weekend and don't want to screw up a $70 piece of meat. I have learned from you guys and gals how to cook it (thanks to Qbabe and Trex and others) but have never cut my own steaks, always bought them with plastic wrap on them. Want them to be in the 1 1/2 to 2" thickness. Thanks for any help Saucy Elbows

Get the meat very cold and use a very, very sharp knife and you should have no problem.

take a very sharp knife, if there is a silver skin visible, it needs to come off. Similar to the skin wealways talk about taking off on ribs, but this one is silver in color and harder to remove, take your time.The first 4 inches or so of the thickest part of the loin is good but better sliced thin, quickly seared, and use on Po-Boys....then you'll find the rest suitable to cut as desired for steaks, towards the end as it tapers down like a tail, you may want to cube them and make a few kabobs with them or again you can use for stir fry, expensive stir fry but darn good.Hope this helps.

Wil, All the info is good. When I get down to the "tapered"end I fold it over (smallest end over the larger end and secure it with bacon. This meat is expensive and if I can get one more steak for the egg I'll do it.
I usually start at the thick end and work towards the smaller end. If you plan right you should be able to get very nice steaks out of the WHOLE tender with very little "waste" or trimmings.[p]Take your time and make sure you get all the silverskin off - with a sharp knife.

Saucy Elbows,
High Mountain Jerky offers a video that does some very simplified meat cutting. It's only 9.95. I've done bacon wrapped tenderloin after watching..easy and tasty. I know its too late for this weekend but it maybe something you want get for the future.
